綠茶係茶葉嘅一種。經殺青、揉撚、幹燥,大部分白毫脫落,浸泡後係綠湯綠茶。綠茶通過加工工藝嘅唔同可分為四種:蒸青茶、炒青茶、烘青茶、曬青茶。
中國大部分名茶係綠茶,好似龍井、碧螺春等。喺清明前,茶樹啱啱發芽時採摘嘅,係「明前茶」又叫做「蓮心」或「銀針」;喺谷雨前採摘嘅,係「雨前茶」,茶葉已展開,亦叫做「旗槍」;喺立夏前採摘嘅係「三春茶」,已經有兩片葉展開,亦叫做「雀舌」;立夏後再採摘,葉片已變厚,係「四春茶」,亦叫做「梗片」。
