Τα ορνιθόμορφα (Galliformes) είναι μία από από τις τριάντα τάξεις των πτηνών στην οποία ανήκουν οι κότες, οι γαλοπούλες, οι φασιανοί, τα ορτύκια, οι πέρδικες, οι αγριόγαλοι, τα παγώνια κ.α.
Τα ορινιθόμορφα (Rasores), γνωστά και ως Σκαλιστικά, χωρίζονται σε 5 οικογένειες, με 24 γένη και 263 είδη. Απαντούν σε όλο τον κόσμο, εκτός από την Ανταρκτική. Έχουν μεγάλη οικονομική σημασία για τον άνθρωπο. Πολλά έγιναν κατοικίδια, ενώ άλλα αποτελούν θαυμάσια θηράματα.
Το σώμα τους είναι μέτριο σε μέγεθος και καλύπτεται από παχύ και σκληρό φτέρωμα. Φέρουν κοντό και ισχυρό ράμφος. Η ρινοθήκη (επάνω ράμφος) εξέχει από τη ραμφοθήκη (κάτω ράμφος) και στο άκρο της κυρτώνει λίγο προς τα κάτω. Αρκετά είδη φέρουν στο κεφάλι λειριά ή κάλλαια ή άλλου είδους υπερσαρκώματα, τα οποία είναι ιδιαίτερα ανεπτυγμένα στα αρσενικά.
Τα ορνιθόμορφα παρουσιάζουν φυλετικό διμορφισμό, δηλαδή τα αρσενικά και τα θηλυκά άτομα εμφανίζονται με διαφορετικά χαρακτηριστικά. Τους αρέσει να κυλιούνται στο χώμα ή στην άμμο, όχι όμως και στο νερό. Τρέφονται με φυτικές τροφές ή καμιά φορά με μικρά ασπόνδυλα που βρίσκουν σκαλίζοντας στο έδαφος. Είναι συνήθως πολυγαμικά όντα, πολλά αρσενικά ερωτοτροπούν και διαπληκτίζονται για ένα θηλυκό ή πολλά θηλυκά για ένα αρσενικό. Στα πολυγαμικά Ορνιθόμορφα η φυλετική διαφορά είναι έντονη.
Στον πρώτο περίπου χρόνο της ζωής τους είναι ώριμα να γεννήσουν. Γεννούν πολλά αυγά, τα οποία κλωσσούν συνήθως μία φορά το χρόνο. Το θηλυκό κλωσσά τα αυγά 12 ως 28 ημέρες. Οι νεοσσοί είναι ικανοί να βαδίσουν αμέσως και αναπτύσσονται μέσα σε λίγους μήνες.
