炒貴刁(粵拼:caau2 gwai3 diu1) ,正式名係炒粿條(粵拼:caau2 gwo2 tiu4*2),係閩南嘢食。粿條係稻米粉條,同廣府河粉或客家粄條相似,嚮華南、馬來西亞、新加坡東南亞一帶唐人街有得食。新加坡人同香港人,跟閩南語讀音,將「粿條」音譯成「貴刁」。
傳統炒貴刁材料包括:蝦仁、雞蛋、臘腸、綠豆芽、魚餅同韭菜咁。醬料包括生抽、老抽、蠔油咁,加上辣椒醬。炒粿條味道鹹甜中帶辣,重要炒功火侯,要趁熱食。
另外有啲香港食肆,炒貴刁唔用豉油同辣椒醬,改用咖喱醬炒,似星洲炒米,色水比較淺,不過一樣都係辣嘅。
