沙丹豬扒,係一款起源自澳門茶餐廳,之後傳到香港嘅菜式,基本上有一塊豬扒加一隻太陽蛋,再加塊火腿片(亦可以用煙肉或者腸仔取代),雜菜豆(青豆,粟米粒,紅蘿蔔粒)伴碟,淋個橙紅色醬汁,醬汁由洋蔥、紅蘿蔔、茄膏等多種材料搞碎煮成,多數配白飯食,即係沙丹豬扒飯。沙丹豬扒塊豬扒亦可以換,譬如可以用雞扒或者魚柳。
點解叫「沙丹」,喺澳門有一種解釋。以外文用醬汁同材料嘅命名方式,「沙丹雞扒」應該叫「茄汁雞肉火腿蛋」,而對應嘅葡文係「Carne Galinha c/Fiambre e Ovo à Saturn」,而沙丹同「Saturn」音似,因此俾後人咁樣叫。不過呢個解釋有個問題,就係「Saturn」響葡文無「茄汁」嘅意思,所以「沙丹」個名嘅由來依然未有定論。
