乳者,俗作奶,哺乳動物皆有之,蓋其所賴以飼子孫者也,乳皆出雌性,乳腺之精華也。人之初,幼弱不能化其所食,故以乳代之,作調代謝,護消化道之用,就人而言,需哺子近年,餘各有差,久之,人類乃牧牛、羊,取其奶充飲食之需,遂成大類,所用頗多。其中蛋白甚豐,頗益康健,今世人多好牛乳。復有酵發乳品,提煉精華而成食料者,奶酪、黃油、酸奶皆是。
