Sambalado adolah salah satu jenis makanan khas di Minangkabau nan bahan dasanyo tabuek dari lado.
Urang Jawa manyabuik sambalado jo sambal balado. Sambalado biasonyo dimakan urang Minangkabau sabagai kawan jo pangganti samba. Lado nan dipakai biasonyo lado karitiang, lado bulek, lado merah, lado mudo atau lado hijau. Bahan-bahan mambuek sambalado, takah lado, garam, bawang jo tomaik. Sambalado dimasak urang Minang indak hanyo untuak pangganti lauak pauak di rumah, tapi dihidangkan juo di acara-acara adaik jo baralek.
