Gulai toco adolah hidangan tradisional bagulai nan dikenal di masyarakaik Minangkabau.
Sasuai namonyo, hidangan iko babahan dasar dari tauco nan dimasak manggunoan santan. Tambahan bahannyo dapek barupo udang, buncih, jo tahu. Hidangan iko disuguhi sabagai sayua pado katupek atau lontong untuak sarapan pagi.

Caro mambuek gulai iko, patamo jariang minyak goreng. Untuak bumbunyo, tumis cabe, bawang merah, bawang putiah, langkueh, daun salam, daun jeruk, serai, jo jahe. Aduk rato hinggo layu jo harum. Bahan tambahan takah udang, buncih, jo tahu dimasuakan kudian diaduak hinggo rato. Kok sado bahan alah matang, agiah garam sacukuiknyo.
Gulai toco dalam panyajiannyo diagiah jo karupuak merah sabagai palangkok.
